Katu
The pungent taste in Ayurveda is the hottest and driest of all tastes, composed of air and fire elements. Despite having cold potency, it offers numerous benefits including healing throat diseases, managing skin disorders, promoting digestion, and expanding body channels. Best consumed during spring, excess consumption can cause thirst, fainting, and depletion of strength. Dry ginger, long pepper, and garlic provide pungent benefits without negative effects. While opening the mind and senses, pungent taste is associated with the emotion of anger and significantly increases vata dosha.
